Healthy Couscous Salad

Ingredients

  • 1 1/2 cups couscous

  • 1 1/2 cups vegetable broth or water

  • 1/2 red onion, diced

  • 1 red bell pepper, diced

  • 1 yellow bell pepper, diced

  • 1/2 English cucumber, diced

  • 1/2 cup Kalamata olives, pitted and halved (optional, I leave them off because I am not an olive fan!)

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped fresh parsley

  • Handful of spinach and arugula, chopped

  • 1/4 cup chopped fresh mint

  • 3 tablespoons lemon juice

  • 3 tablespoons olive oil

  • 1 teaspoon Dijon mustard

  • 1-2 garlic cloves 

  • Salt and pepper to taste

Directions

In a medium saucepan, bring the vegetable broth or water to a boil. Add the couscous and stir to combine. Cover the pot and remove it from heat. Let it sit for 5 minutes to allow the couscous to absorb the liquid.

  1. Fluff the couscous with a fork and transfer it to a large bowl.

  2. Add the red onion, red and yellow bell peppers, cucumber, Kalamata olives, feta cheese, parsley, greens, and mint to the bowl. Toss everything together until well combined.

  3. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, salt, garlic, and pepper until well combined.

  4. Pour the dressing over the couscous salad and toss everything together until well coated.

  5. Serve immediately, or cover and refrigerate until ready to serve.
