Zesty Bacon and Egg Breakfast Hash

I drew inspiration for this breakfast from a beloved local coffee shop right here in Kansas City. This breakfast hash captures the essence of their flavors, combining crispy bacon, fresh greens, toasted potatoes, and a zesty sauce. Ingredients

For the potatoes

  • 2-3 small red or yellow potatoes

  • 1 tsp Italian seasoning

  • Salt and pepper

  • 1/4 tsp onion powder

  • 1/4 tsp garlic powder

  • pinch of smoked paprika

For the rest of the bowl

  • Arugula/spinach mix

  • Cheddar cheese

  • 1-2 slices of bacon

  • scrambled eggs, salt, pepper, parsley flakes (optional)

  • Sriracha mayo or any other hot sauce

Directions

  1. Cut the potatoes into small cubes.

  2. Microwave the potato cubes for 5-6 minutes to soften and reduce cooking time.

  3. While the potatoes are in the microwave, cook bacon on the stove. Leave the bacon grease in the pan for added flavor.

  4. Once the potatoes are done in the microwave, remove them and season with onion powder, garlic powder, salt, pepper, Italian seasoning, and smoked paprika. Ensure the seasonings coat the potatoes evenly.

  5. Remove the crispy bacon from the pan and set it aside.

  6. Add the seasoned potatoes to the pan and cook until they become crispy.

  7. When the potatoes are almost to your preferred crispiness, add diced onions and cook for 2 minutes until the onions turn soft. Set this mixture aside.

  8. Cook your eggs to your liking; for this recipe, scrambled eggs are recommended. Season the eggs with a light amount of salt, pepper, and parsley flakes.

  9. Assemble the bowls by placing the crispy potatoes at the bottom.

  10. Top the potatoes with a handful of spinach mix.

  11. Add your cooked eggs on top of the spinach.

  12. Sprinkle a bit of cheddar cheese over the eggs.

  13. Garnish with bacon strips or bits.

  14. Finish by drizzling sriracha mayo or your favorite hot sauce over the top.
